Billtown BBQ Executive Chef Michael Flies's intention is to use as much local and regional produce, meats, beverages, and products as possible.
Bill's passion for quality smoked meat has been passed down three generations from his great grandfather. Many of the current recipes in use at Billtown BBQ today contain the same ingredients that were used over a century ago.
